The Chef: Luca Rizzetto (Trattoria via dell’amore, Riomaggiore)<\/strong><\/p>\n

Luca was born in Turin, Piedmont and moved to Cinque Terre for romantic reasons. He immediately fell in love with the region and opened a tea room in La Spezia, before opening his restaurant. Luca loves to teach his passion for Ligurian cuisine and not just pesto. He cooks rustic traditional recipes such
\n‘Mesci\u00fca’, a soup made with cereals, beans and chickpeas. Testaroli, a kind of pasta with a spongy consistence usually served actually with pesto, mushroom sauce or simply olive oil and parmesan. Panissa, a meat filled ravioli served with mushroom sauce, and of course sea food such as stuffed mussels and calamari.<\/p>\n

Cook at home and stay safe!<\/h4>\n

Vigorously whisk egg yolks with sugar using a handheld electric mixer at medium speed then beat in mascarpone cheese until it is well incorporated.
\nWhip whites with sugar in a bowl until it gets firm and gently fold in into the yolk-mascarpone mixture.
\nDip the ladyfingers very quickly into the coffee and line the bottom of the baking tray.
\nMake layers as per the video.
\nCover with plastic wrap and keep in the fridge for at least 2 to 3 hours.
\nDust with cocoa powder before serving
