The Chef: Rosa Jackson (Les Petits Farcis, Nice)
Rosa offers market tours combined with cooking classes, and chose Nice for its vibrant food market and unique culinary traditions influenced by Italy and other Mediterranean cultures. Her classes are peppered with advice on how select the healthiest ingredients and prepare them in ways that preserve their nutrients and minimize intolerance.
She is also a France-based food writer, Rosa has edited several editions of the Time Out Paris Eating and Drinking guide and contributed to publications such as Food & Wine, Eating Well &The Financial Times.

Green Shakshuka
1 tbsp olive oil, plus extra for cooking the eggs and serving 1 leek, sliced
12 Swiss chard leaves, sliced
6 asparagus spears, sliced
2 garlic cloves, minced
Sea salt
4 eggs
1 tsp zaatar
1/2 tsp chili pepper
1/2 tsp paprika

Pavlova with passion fruit
3 egg whites
175 g (3/4 cup) sugar
A pinch of salt
1 tsp white vinegar, lemon or lime juice
2 tsp cornstarch
A pinch of vanilla powder or 1 tsp vanilla extract
Fruits of your choice
1 cup thick yogurt, whipped cream, crème fraîche or fromage blanc
1 tbsp cane sugar
A little vanilla powder or extract

The Cooking School: Les Petits Farcis, Nice
Start your day at the Cours Saleya market.
Rosa will introduce you to the small producers. The fruit and vegetables are not as uniformly shaped and the variety not as great, but every ingredient we’ll find here is firmly rooted in the region and much of it is organic.
Then, you will make your way to the Petits Farcis cooking studio, where everyone will play a role in preparing the meal.
The atmosphere will be relaxed! A couple of hours later you will enjoy an authentic Niçois meal and toast your efforts with a glass of rosé (or, if you prefer, an intriguing local red or white wine). This will certainly be the highlight of your French Riviera vacation.

A vibrant old town, with narrow cobblestone streets and pastel-hued buildings
A daily market on pedestrian street Cours Saleya where you will find fresh produce & flowers
Chickpea Pancake, La Socca. You have to try it from one of the street vendors: “Socca, socca, caouda que bullie!” – meaning “Socca, socca, scorching hot socca!”

The Matisse Museum contains one of the world’s largest collections of works by the artist who spent many years in Nice
Promenade des Anglais, between sea, city and the sky, the most seductive seafront in France bordered with impressive early 20th century hotels


The Russian Cathedral the most splendid Orthodox church outside Russia, built for Russian nobles of the Tsarist regime who used to spend their winters in Nice.
