The Chef: Thomas Danigo, Head Chef of Le Galanga
Thomas is a young talented chef, an experienced globetrotter and has accumulated a vast culinary repertoire.
He worked under Chef Alain Pegouret at the Michelin star restaurant, Laurent.
For Galanga, he has developed a fusion cuisine and offers dishes such as coconut milk cod with Asian mushrooms or 21-day aged beef with a nori teriyaki sauce but also classics such as prawn ravioli, yellowtail carpaccio or organic avocado tacos sprinkled with herbs.
List of the ingredients:
Porridge and caramelized apple 60 gr of oats
200 ml of milk (you can use soy milk) 15 gr of agave syrup
2 tea spoon browned sugar
1 apple
1 pinch of salt possibly “fleur de sel” 1 cinnamon stick
