Episode 16 – Meeting the French – Croissants

The Chef: Chef Myriam (Meeting the French, Paris)
Chef Myriam is welcoming you in her beautiful apartment overlooking Montmartre & Paris.

List of the ingredients:
250 g of purpose flour (2 cups)
60 g of milk (0.25 cups)
60 g of mineral water (0.25 cups)
20 g of unsalted butter
105 g of unsalted butter
5 g of salt
30 g of white sugar (1/4 cup)
10 g of fresh active yeast

The recipe: French Croissant
Heat for 15 s in the microwaves the milk, add the yeast and stir with a fork. Leave 5 minutes, till the yeast is dissolved and the mixture get foamy. Melt 20 s in the microwaves 20 g of unsalted butter. In the bowl using the dough hook on speed 2, add the flour, the salt and sugar, knead well, add the 20 g of melted butter, the milk with the yeast and the water. Mix for 7 minutes always on a low speed. After 7 minutes, make a ball, wrap it in a plastic film and put in the fridge for 2 hours.

Prepare the butter. Place between 2 parchment paper the 105 g of butter. Roll out and make a small rectangle and put into the fridge with the dough for 2 hours. Laminate the dough : on a light flour surface, roll out the dough with a pastry roller, in a large rectangle. Place the rectangle of butter on the center and fold the dough as you would a letter to enclose the butter. With the palm of your hand, press the edges of the dough to seal. You will get a square, brush the excess flour.

The first single fold : You should have the fold on your right, and always on a light flour surface roll out the dough, to obtain a long rectangle shape. Fold in 3. Wrap and keep in the fridge for 1 hour or 20 minutes in the freezer.
The second double fold : Turn the dough piece ¼ turn, the fold should be on your right. Roll out always keeping a long rectangle shape. Fold the dough in 4 to form a double fold. Wrap in a plastic film and keep in the fridge for 1 hour or 20 minutes in the freezer.
The third single fold : Same way as the 1st single fold. At this stage you have the choice to put 1 hour more in the fridge or overnight.

Shaping croissants : Take the dough from the fridge and over a light floured surface roll out the dough into a long and narrow strip of 60 cm x 18 cm and thick 4 mm. Using a knife or a pizza wheel cut in 9 triangles. By hand gently elongate each triangle to about 20 cm. On the wide side, in the center, make 1 cm notches. Start rolling from the wide side, continue rolling few times the croissants. Place them on an ungreased baking sheet, with about 8 cm between them. Cover with a plastic film. Let the croissants set for another hour
