Episode 13 – Hotel La Réserve – Cherry and goats milk yogurt cream pintxo (sweet Basque tapas)

The Chef: Chef Pierre Boffo , executive chef at La Reserve
At only 24 years old, Pierre is the executive chef at La Réserve. He has trained with some of the best Michelin starred chefs in South West France. He spent a year working in Australia, and brought back new trends from his travels.
His menu showcases modern French Basque cuisine.
When he was little, he loved baking with his grandmother and when he is not working, he loves to eat pintxo (tapas) in Spain.

Ingredients for 2 people:
Sable: Shortbread crust
125 g of flour or 1 cup
60 g of butter or 1/4 cup
25 g of sugar of 1/8 cup
1 pinch of salt
1 egg
Goats milk yogurt cream
200 g of heavy cream or 1 cup
20 g of sugar or 1/8 cup
2 tablespoon goats cheese yogurt
1 tablespoon mascarpone (if necessary)

The Hotel:

The menu is based heavily around regional seasonal fruit and vegetables, with the flavors enhanced with freshly grown herbs and edible flowers. Vegetarians will have a blast. The chef relies on local products; the fish comes from producers around just 10km away and Saint Jean-de-Luz.
