The Chef: Pascal Arcé, executive chef & owner
The Maison Arcé has been an inn since 1864; Pascal has followed the steps of his great-grandfather, his grandfather, and his father. He started cooking very young, alongside his father, Emile Arcé. The beautiful family secret recipes have been kept in small notebooks and passed on from generation to generation.
Pascal worked in Paris in a gourmet restaurant, then in London and San Francisco, where there is an important Basque community, before returning to his beloved region. With his wife Christine and their daughter Coline, they work every day with love to make their home an unforgettable place.

The Hotel:
Staying at Hotel Arcé is a destination in itself as this house combines historical, culinary and a nature heritage. You will receive a warm family welcome, and introduction to the Basque culture, and above all will enjoy an authentic haven of peace. Relax on the terrace shaded by hundred-year-old plane trees planted by Octavie, walk barefoot along the river or by the pool. Just return to the essential and nature’s serenity. All the rooms are different and beautiful and offer a view either on the river or the mountains.


The Location:
Located in Saint-Étienne-de-Baïgorry, France in the heart of the Basque Country, surrounded by a pristine river and the mountains, it is a pastoral seting.
The nearest airport is Biarritz, about 1 hour away from the property.
The Cuisine:
The Chef combines traditional dishes with modern elegance. He only uses the freshest local produce. The restaurant has two unique setings. On the outside terrace, you’ll appreciate the freshness of the plane trees surrounded by the river and mountains. In the shelter of the old trinquet you’ll be immersed in the family’s sporting history especially with pala rackets of past pelota players on display. Basque paintings by Pablo Elizaga complete the decor.
